Step-by-Step Instructions
Step 1: Color the Buttercream
Take the navy dust and pour about half into the buttercream. Fold in a few times for a more imperfect, natural wave look or blend completely for a more consistent color distribution. Either style works so go with what you prefer!
Step 2: Apply the Buttercream
Scoop some of the buttercream using the back of a spoon or a small spatula from the bowl and start at the bottom of the cake and pull the icing up towards the top, and then making a sharp curve down, creating a wave effect.
Follow through around the entire cake and then take a smaller amount of the icing for a thinner top layer and replicate the same application technique starting from the center of the cake, working towards the edge until the top is covered.
Step 3: Dust the Gumpaste Pieces
Take a small amount of the pink begonia dust and add it to some Everclear alcohol and mix together. Repeat the same for the navy dust in a separate bowl. Take the seahorses and paint them with the pink begonia color and set aside to dry. Move on to paint the conch shell and seashells in the navy color and also set aside to dry. There are no perfect seahorses or shells in the ocean so no perfect pieces are required for this cake! Just have fun and let your creativity go!
Tip: If you do not have Everclear around or do not have anything to paint with, just use a cotton pad (makeup pads work!) or similar to dust the color onto the pieces. It will result in a beautiful way to showcase the dimension of the pieces with both light and dark areas highlighted.
Step 4: Apply the Sprinkles & Decorations
Open the Halo Sprinkles and place them around the top edge and along the bottom side of the cake. They can be added loosely so they sit on top of the buttercream. Watch the video to see Chef Maeve's application style.
Take the seahorses and press and hold them onto the side of the cake for a few seconds until they are secure, with the top half of the seahorse extending beyond the top of the cake so they appear to have their heads above water. Space the first four seahorses out evenly like a clock at 12, 3, 6, and 9. Next, take the remaining seahorses and position them at 4:30, 7:30 and 10:30.
Next, apply the conch shell on a slight angle between the 12 and 3 position, also a bit above the edge to give the cake dimension. And finally, apply the small shells around the sides of the cake, holding gently in position for a few seconds, in a random pattern.
